Despite some people have baffling theories about real artisan bread, stored in a plastic bag a loaf will last 3-5 days depending on the environment (ideally around 22c-24c) before firming and a good week or more for toast. Bread can be frozen and for anything served warm (e.g. focaccia), it will make no difference if eaten on the day or eaten after being taken out the freezer, thawed and reheated wrapped in foil.
